Lemon Honey Pepper Chicken for Two

The other day Devin said he wanted Lemon chicken, so I looked up a million different recipes to try something that wasn’t just some lemon on chicken and I found a recipe for Lemon Honey Pepper Chicken, it looked so good but it made enough for like 7 people and since there are only two of us I decided to make the recipe smaller. So here is what I did. I wish I had pictures of it but I forgot to take pictures before Devin got home.


Lemon Honey Pepper Chicken

Things you will need:

1 Lemon

2 Tbs Honey

2 Tbs Chicken Broth

1/4 cup Chopped Onion

2 boneless skinless chicken breast



4 Tbs Olive oil

Preheat the oven to 400 degrees

First I zested half the lemon and saved the zest for later. Then I juiced the half of the lemon that I had just zested, and saved that for later too. After that I put the oil and the onions and some of the chicken broth in the skillet to help brown the chicken. All I did was brown the chicken in the skillet and then put it in a pan to cook the rest of the way through. When I stuck the chicken in the pan I covered it with more pepper, lemon juice and lemon zest, and then I took the onions from the skillet and placed it around the chicken. After that I sliced up the other half of the lemon and placed it in the skillet as well. I cooked the chicken covered for about 15 minutes. To be honest I wasn’t paying that much attention to the time. We served it with rice. Devin really loved it, and I was pretty proud of myself for making something that Devin will eat again!

Getting Ready For Our Beautiful Baby Girl

We are just over a month away from meeting our little one, and getting ready for her has got to be one of the most COMPLICATED and CONFUSING thing on the planet! There are so many things that you as the parents have to think about, and there isn’t a shortage of people who want to tell you exactly what they think you should do. Luckily for us our families are very supportive of the choices that we are and have made for our beautiful little girl. The hardest part of the process has been trying to get everything done and make sure we have everything we need for our baby. I have looked at list after list of what I need to buy and I will be completely honest some of the stuff that the lists say you “need” just seems frivolous. No I do not need a wipe warmer, I didn’t die when my mom used cold wipes and my baby will be just fine without a warmed up wipe. So after all the things I have read and knowing what we have to work with in our nursery I think I have a complete list of what I will need for my sweet baby girl.


This is the mini crib.

Crib- We are thinking about getting a mini crib because our apartment isn’t super spacious, but a regular crib will last her a lot longer. Also basically every crib we have looked at has been a 3 in 1, which is cool, we just aren’t sure we are going to end up being able to use it as a toddler bed or twin bed, but the fact that it is an option is always nice.


Rocker or Glider- we have a glider that my dear sweet husband will one day paint for me and I am going to reupholster it with fabric and cushions that I think will match her room better.


Baby Bouncer Seat- I am having the hardest time finding one that isn’t either PINK and I mean PINK or jungle themed and sings. My sister in law suggested just putting a blanket over it, so that is what I think I am going to do unless I get lucky.



Bumbo- okay this isn’t a must but my sister-in-law had one and she loves it. Plus the fact that we have limited space in our apartment makes this a much better alternative to a big BULKY high chair. (I already ordered this because I knew I wanted it and I just got lucky enough for it to match the colors that I want for the nursery!!)

Boppy Nursing Pillow- I want it so that it is less painful on my arms to nurse. Devin wants it so that he can use it for arm support for his video games.






Baby Carrier- I am afraid that this is going to be the hardest thing to 81Wno3cswsL._SL1500_find because my husband and I are so different in size I am afraid we won’t be able to find one that fits us both or will adjust to us both I guess.





Car Seat- We have found one that we love that will fit baby girl until she is 3olbs, and we don’t want her to grow out of it too quickly. Also it goes with the stroller. It is called a travel set. We love it!!! It is called the Chicco Keyfit 30.




Stroller- We are going to get the Chicco Liteway Plus stroller. It zips down so that we can put our car seat on it. I love it! I can’t wait to get it.

Exersaucer- I am a little hesitant to get one of these not because she doesn’t need one but because my husband was kind of a wild kid when he was little and he would scoot himself to the top of the stairs and then throw himself down the stairs. His brother says that he would only cry because he was upside down and he wanted to do it again. He is such a crazy guy! (This story is told best by his brother, it is really funny, I just don’t want my daughter to be as adventurous as her daddy)


Breast Pump- I have been looking into all kinds of breast pumps. I think we are going to get an electric one.



diapers and all that baby care stuff. Lotions, soaps, and that kind of thing.

Oh and one last thing! A pack-n-play my parents had one for my brother and it made it a lot easier to keep my littlest brother’s toys and stuff that he wanted out of the way while we cleaned or played our games.

There are so many things to think about. My next big thing to think about is the fact that I need to start packing a hospital bag. AHH!!!!!

All of this means that baby is getting so much closer to being here. I can’t wait to be able to hold her in my arms and not just feel her move in my belly!! So EXCITED!!!!!!

4th Of July!!

Every week Devin has Wednesdays off, but this week I got to spend two whole days with him because the store he works at was closed for the 4th. We had so much fun just spending two whole days together. His day off is always my favorite day of the week because he is relaxed and I get to spend the whole day with hm. On Wednesday we spent the morning waiting for my books to get here, I love reading so getting a new book is one of my absolute favorite things! Devin thought I was crazy for being so excited about a book, but really I love to read! The books didn’t get here when we thought they would so we went to a movie, because that is what my Devin likes to do.

We saw Despicable Me 2 and it was cute and funny, but we don’t plan on buying it. We did learn though that if you go to a kids movie during the day, 1 Obviously there will be a TON of kids 2. The kids are really loud 3. You really can’t watch the movie if you bring kids with you. As much as we are looking forward to our little girl and being able to do all of those fun things with her I am sure that we will miss the days of being able to just pick up and go to a movie and actually watch the whole thing.

Then Saturday afternoon we went to the Cache Valley Cruise-in Parade. It is a parade of cool cars, well mostly, if you know my husband you know that he loves cars so this was the perfect afternoon activity for him. There were lots of cool cars and lots of cars that neither one of us understood exactly why they were in the car show in the first place. My favorite car that came through was the Delorean they guy driving it even dressed up as Dr. Emmett Brown from Back to the Future. It was really cool to see all of those old cars and it was a really fun week.

I kinda suck at the whole taking pictures thing so that didn’t happen. From now on I am going to take my camera with me wherever I go and I am going to take more pictures with my phone. Hopefully I will do better with pictures soon! What I really want is a nice camera so that I feel more motivated to take good pictures.

Hopefully I will be better about blogging, at least until Boston is born. We moved our blog to WordPress because I wanted to start over and not have it connected to all of my other attempts at blogging.


With a new blog comes a few other changes that I would like to make.

Mostly I want to post more on the blog, especially now that I am always at home, so my plans for motivating myself to blog more is to give myself a reason to post on my blog.

First of all, my in-laws like food, and I mean they really like food. I like food too, but they are so good at cooking and I am not , so one of the things I want to try is not just to motivate me to post on the blog more but also, so my husband will enjoy dinner more. I am going to try to post at least twice a month (I would love to do it once a week) a new meal that I tried and then talk about what my husband thought about that food.

My next thing to hopefully help me post more and get me to finally get something done for Boston’s room is I am going to post about how her room is going and all the things that we did with it. I am so excited for this because the closer we get to getting it done the closer we get to our princess being here!

Speaking of our Princess she will be here in just 9 weeks (hopefully)!

Well, that is about it about the move! We are really excited for the changes and hopefully I actually do all the things I plan to do!
